
KFC-style Tofu Burger with pepper mayo
One of the many things you can make with this particular spice mix. It is forgiving too, in terms of adding/removing ingredients. Go nuts! This is just one variation I really like.
Ingredients
- •200 g Tofu (extra firm) - smoked or plain. I prefer smoked
- •To taste KFC-style spice mix (see recipe)
- •100 ml Soy milk
- •6 Tomato slices, seasoned
- •Handful Leaf of choice (e.g. rocket, baby spinach, lettuce)
- •60 ml Vegan mayo
- •2 tablespoons Black pepper (freshly cracked)
- •Pinch White pepper (ground)

Press the tofu in a press for minimum half an hour. Smoked has a lower water content, so take this into account when pressing.

In one bowl, add the spice mix. In another, add the soy milk.

Slice the tofu horizontally through the middle to make 2 even 100g slabs. Then slice these horizontally again to make 4 roughly 50g slabs. Use 2 slabs per sandwich for a thicker, meatier result. For thinner tofu, slice each slab horizontally once more to make 8 roughly 25g pieces in total. This creates more surface area for the spice mix, but the tofu will be chewier and a little drier once cooked.
